Meet The Team

Dan Binet

Chief Winemaker

Daniel Binet has firmly established himself as a renowned figure in the Hunter Valley’s winemaking scene, celebrated for his 20 years of expertise in demystifying the world of wine with a natural and engaging flair. Much like Di and Adam, Dan is also a proud local to the scenic Hunter Valley region and lives here with his wife Natalie and their three sons, Jacques, Manu, and Remy.

Daniel was born in Efate, Vanuatu, moving to Australia in the late 1980s. After completing his schooling, Daniel embarked on a journey to Europe to explore his French heritage, undertaking multiple vintages while abroad. Returning to Australia to pursue his dream of becoming a qualified winemaker, Daniel made significant contributions to well-regarded Hunter Valley brands like Bimbadgen and Capercaillie and is now the proud owner of Binet Family Wines.

Nominated twice for The Wine Society’s Young Winemaker of the Year, Hunter Valley Rising Star, and the Hunter Wine Excellence scholarship, Daniel’s impact extends beyond the vineyards. With a wealth of wine show judging experience, Daniel frequently travels regionally, nationally, and internationally, with recent invitations taking him to Shanghai and New Zealand.

Most of Daniel’s life has been dedicated to the growing, cultivation and making of wine. Dan’s wealth of knowledge, gained from diverse backgrounds and exposure to international perspectives, allows him to create wines for Molly Morgan that embody the essence of the Hunter Valley, while reflecting a global appreciation for the art of winemaking.

“We always create wines that tell a story about the vineyard, the seasons and the style of the wine, almost everything is done by hand.”

– Dan Binet.
